Meaning riding full force straight at a guy and skewering him with a lance/throwing weapon/whatever will improve it. Going for a joyride won't. You're better off skewering everyone with a spear and riding (quickly, bring a lot of horses/horsemen and a light load) to the next battle to repeat it. "On the map" means not on the battlefield.

There is 4 options in the manage castle/town menu on the bottom. One of them is festivals and something and it raises loyalty by +1 a day i think. You can hover over the loyalty number in that menu and it will show you what affects it. I cant remember off the top of my head but i think bigger garrisons help. Anyway just turning on festivals and You'll understand how to take any town or castle, boost the construction speed of your settlement projects & win offensive sieges while being outnumbered by as much as 3 to 1!
