All the classes can dps or support in some kind of way. There is no tank or healer per se. The main roles (on pve endgame content) are dps, support. The support class are the tank (if needed) and healers most of the time but also covers important boons, and there is some dps that goes half dps half support too.

Mechanist, Firebrand, Virtuoso. Almost all classes have excellent builds for various modes in PvE. I don't think it's as easy to say these three are the best. But to answer ur question, Currently I guess the top two would be Guard and Engineer. Being a necro main for as long as I can remember, I might be a bit partial on saying he comes third If you are looking for strictly support and looking to play one class I would say guardian, specifically firebrand. The Scribe discipline is very useful if you have a Guild. It requires Heart of Thorns expansion and it allows you to craft Guild decorations for your Guild Hall! The actual crafting is a bit different from other crafting disciplines. If you have a Guild or are in one perhaps you could be the decorator.
The 1-80 is already relatively easy compared to expacs and such, so being max level, (even though you do scale down), will make it even easier/more boring. Also, the combat system is actually quite deep, so having it all thrown at you at once can be a bit deflating. If you don’t want to level up, use the booster.
